African Sweet Potato Recipe

An African Recipe for Sweet Potatoes with Tomatoes.

African Sweet Potato Recipe with Tomatoes

Ingredients
  • 1 pound/450g sweet potatoes, peeled
  • 2-4 tablespoons/25-50g margarine
  • 1/2 teaspoon of sugar
  • 1 teaspoon chilli powder
  • 3 medium tomatoes, sliced
  • salt and pepper
  1. Boil the sweet potatoes, whole, in water until they are soft, usually 30 minutes depending on the size of the vegetable. Drain and allow them to cool and then cut into 1/4 inch/0.5cm slices.
  2. In a pan, melt the margarine and saute the potato slices for about 5 minutes until golden brown. Add the chilli powder, salt, pepper and sugar and mix well. Now put in the sliced tomatoes and cook for a further 5 minutes. Serve hot with grated cheese or cooked sliced sausage on top if desired.

Kenya Link Recipe for Sweet Potato, Cheese and Onion Casserole

Ingredients
  • 1 pound/450g sweet potatoes, peeled and sliced thinly
  • 1 tablespoon margarine
  • 1/2 teaspoon chilli powder
  • 1 large onion sliced thinly into circles
  • 1 cup/225g cheese grated
  • A little water or stock
  • Salt and Pepper
Heat oven to 350F/180C/Gas 4

  1. Greese an oven proof dish and line it with the sweet potato slices. Pour in just enough water or stock to coat the base of the dish evenly and then dot margarine amongst the layers of potatoes.
  2. Arrange the onion circles on top of the sweet potatoes and finish up with the cheese. Sprinkle on the chilli powder, salt and pepper.
  3. Cover the dish and cook for one hour, removing the lid for the last fifteen minutes to brown.
